We’ve been known to pop in to Friðheimar for a lunch (or two) while visiting Iceland over the past decade; and there’s a reason why it’s stayed top of mind for us. Despite having long and dark winters, the family owned, and operated farm grows tomatoes all year round in their two artificially lit greenhouses. The best way to spend your time there?
